Nothing says Christmas like a little red and green, and what better red and green could emerge from the kitchen than tomato soup and Watergate salad?
Nothing, actually. I normally eat organics, whole grains, leafy greens. Bah! Good things come in packages on Christmas, and packaged food is no exception. My mother has made this “salad” every Christmas or New Year’s for as long as I can remember. Here’s the recipe, straight from the pistachio Jell-O pudding box: my holiday gift to you.
WATERGATE SALAD
1 can (20 oz) crushed pineapple in juice, undrained.
1 package (3.4 oz) Jell-O Pistachio Flavor Instant Pudding
1 ½ cups thawed Cool Whip Whipped Topping (My mom and I use 1 8-oz tub)
1 cup (or more!) miniature marshmallows
½ cup chopped pecans.
Combine ingredients. Refrigerate 1 hour. Eat by the tree.

What a perfect holiday combination of red and green!!! It is sooooooo exciting to read your cooking blog again…….alas……..the cooking spirit is all around me again!!!!
Dumplin’!!!!!!!!
There’s got to be a way to “upscale” it using only organic ingredients… Vegan marshmallows, pistachio pudding and whipped cream made from scratch using organic milk, fair-trade pecans, and cruelty-free pineapple.
Oh, and remove the “be” from the first paragraph.
Merry Christmas and Happy New Year!
